ABOUT THE ROLE
This position is for a Culinary Professional who values the craft of cooking as much as the culture of a healthy kitchen. You’ll work closely with our entire team to guide the creative and operational sparks of Charlotte & The Quail: our culinary vision. You’ll lead the direction for an aligned kitchen team that cares deeply about what they do; from the origin of each ingredient to the flow of a shift. As a mentor and guide, you will set the tone in both flavor and leadership. You are here to build something lasting — from a foundation that is grounded in collaboration, respect for the land, and a deep love of food.
KEY RESPONSIBILITIES
MENU & CULINARY DIRECTION
Design and execute dishes to celebrate a farm-forward brunch and lunch menu
Maintain strong relationships with our dedicated growers & suppliers to plan intentional, seasonal menus
Develop and maintain recipes, prep guides, and production systems
Lead by example to maintaining a high standard of flavor, simplicity, and presentation that wraps our guests right into the garden
Collaborate with FOH to create pantry and café-style retail offerings
TEAM & CULTURE LEADERSHIP
Nurture a kitchen culture that is grounded in collaboration, respect for the land, and a deep love of food.
Lead and develop a small, tight-knit culinary team built on shared care and accountability
Train and mentor cooks with a focus on seasonal technique, knife skills, prep rhythm, and thoughtful plating
Guide and support performance reviews and team growth plans in collaboration with management
OPERATIONS & BUSINESS STEWARDSHIP
Schedule BOH staff in alignment with service and production needs and labour cost targets
Track food costs, manage ordering and inventory, and maintain quarterly cost of goods targets
Ensure food safety and cleanliness standards — supply essential structures and documents for the kitchen team to own the pride
Communicate equipment maintenance needs, participate in capital planning, and steward resources mindfully
What You Bring
3+ years in a senior chef or sous chef position
Thrive in a collaborative kitchen where creativity meets discipline
Belief that seasonality is a joyful creative structure
Care about building a team where people grow and feel valued
Leadership with presence, consistency, and a spirit of mentorship
Value sustainability, thoughtful sourcing, and the simple power of well-prepared food
Are Food Safe certified and able to lift 45lbs and work daytime shifts, including weekends
What We Offer
$54,000–$60,000/year, tips & quarterly performance-based bonus structure after 6 months.

Charlotte & the Quail {EST 2010} is a Victoria fav for healthy meals, kind service, and a peaceful environment. Our location is set on the edge of a 9 acre botanical garden which fuels our days - it even includes morning herb & flower harvests for use in cooking & plating. We are a team of skilled culinary & hospitality professionals that have come together to make seasonal meals both our artistic expression and our movement for a more meaningful local food system. We work hard together AND we also have healthy, fulfilling lives.
